Frittata for the win!
Leftover Easter Ham? Consider a gorgeous frittata. Here are a few steps to get you started, but truly, there are no hard and fast rules here. Let your imagination lead the way.
Ingredients:
2 tablespoons butter
½ onion, chopped (I’ve used white here, but I also use yellow and red if that’s what I have!)
½ bell pepper, chopped
1 cup milk
6 eggs
1 cup chopped ham (or more)
1 pint fresh mushrooms (because I had them, and why not?)
1 and 1/2 cup favorite cheese (I’ve used cheddar here)
1 teaspoon crushed garlic
½ teaspoon onion powder
¼ teaspoon crushed red pepper flakes
*optional fresh herbs for garnish
Directions:
Sauté your veggies in the melted butter until soft. Add chopped ham. Stir in mushrooms and crushed garlic. Let this simmer while you take a mixing bowl and combine eggs, 1 cup cheese, and seasonings. Pour egg mixture over veggies and ham. Top with remaining cheese. Bake in 325 oven for 15-20 minutes or until your eggs set. That’s it! Enjoy!
