Fresh Berry Sauce

Wait! Don’t throw out those old berries. Be it strawberries, blackberries, or blueberries looking a little (or a lot) worse for wear, I’ve got a delicious tip for you.

I don’t know about the rest of you RIG friends, but I absolutely despise throwing out groceries. You can credit my raising for that. “Waste not, want not.” I heard that more than a few times. No doubt it’s why I’m always looking for ways to salvage food I might otherwise be tempted to discard—like those aforementioned berries.

 

 

Trim the worst parts off your tired looking berries and save the rest. They’re a great base for a delicious sauce and it’s easy peasy. I’ll walk you through it.

 

 

Add a cup or so of water to a small saucepan over a medium heat. You want to barely cover your berries. Stir in a tablespoon of cornstarch for thickening and a bit of sugar, (to taste) along with a tablespoon or so of fresh lemon juice. Once the sugar and cornstarch dissolve, add your berries. Bring to a boil, reduce the heat, and cook for about ten minutes. That’s it! Use your Fresh Berry Sauce to top waffles, pancakes, ice cream, poundcake…you get the idea. I bet you’ll find some more uses. Let me know when you do.
