The Best Easter Cookie Ever!

I promised I would post a little more details about my Easter cookies. They were truly so good even my mom, the best cook in the world, commented on them. Her comment, “You need to save that recipe.” That’s a definite win! So, I thought it was important to share with you. If you’ve followed me for long, you know I am not the cook of this website. That would be Shellie, so I’m feeling pretty good about getting to share a recipe. Lol. I say I’m a “good enough” cook because I manage to cook, well, because I have too, but it’s in the good enough category, not the great category. But, I think this recipe moved me up the ladder of cooking success. 

So here you go. I doubled the recipe, and, because I’m not a super good cook, accidentally put in a tiny bit too much salt, but no one complained, so I think, I’m good. This recipe takes a little time, but it’s worth it. (See pics for the process) I think the best plan is to roll them into the suggested 1 inch balls, but that’s hard to do so I had a few a tiny bit bigger. Again, no one complained. They are actually so tiny, my daughter Korie said she ate four in a row. Lol. They are tiny, so you don’t feel too bad about the calories. 

 

 

 

 

Of course, I did the icing for the centers in Easter colors, but you could easily use this recipe for wedding showers with white icing or baby showers with pink or blue. Or, whatever party you’ve having, let it match the décor. I used a plastic icing decorator bag to fill the centers. It was super easy to do and, I have to admit, pretty fun! You could also fill the centers with chocolate if you want. 

Recipe:

  • 1 cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 2/3 cups granulated sugar
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • 1 egg
  • 1 teaspoon baking soda
  • 2 ½ cups all-purpose flour
  • Make powdered sugar icing and use food coloring to make different colors for the center

Directions:

  1. Preheat oven to 350. 
  2. In a large bowl, cream together butter and sugars until very light and fluffy
  3. Add salt, vanilla, and eggs. Mix well.
  4. Add baking soda and flour, mixing well.
  5. Roll dough into 1 inch balls and place them on a parchment paper lined cookie sheet 2 inches apart. 
  6. Bake 7 minutes (approximately) Cookies will stay light in color but edges will be lightly golden.
  7. Using the end of a wooden spoon or anything else you can find to make the well in the cookies, gently press the center of the cookie down.
  8. Let the cookies cool before filling the well of the cookie.

Icing Recipe:

  1. 2 cups of powdered sugar
  2. Milk-any kind works-start with 2 tablespoons. Add to get the consistency you want. 
  3. 1/2 teaspoon of vanilla
