Tachos from Shellie’s Kitchen
Disclaimer: This is not a diet food and moderation is a thing. That said, we’re talking TACHOS. After enjoying this version of tacos blended with nachos at a local eatery, I came home and promptly tried to replicate it. The verdict? If we weren’t married I think the beloved farmer would have proposed to me when I served this dish. I wouldn’t even call what I did here a recipe, but I’ll give you the steps.
TACHOS
Step 1: Add vegetable oil to your skillet and fry a single layer of tator tots. (I rarely and I mean very rarely fry anything anymore, but it’s necessary here. Baking those tots won’t deliver the same flavor.) Remove fried tots, drain used oil, and return tots to skillet.
Step 2: Layer cooked and shredded pork over tots. (I had leftover pulled pork in the freezer. It was my standard pulled pork recipe I use when I don’t want to barbecue the pork, and you do not want to use barbecue pulled pork here. You can find that recipe here.)
3. Top with grated cheddar cheese. Pls don’t use the pre-grated cheese. Just don’t. Pls and thank you. Bake at 350 for 15 to 20 minutes or until it’s heated through and your cheese is bubbling!
