Shellie’s Highly Favored Chocolate Lemon Bark Candy

I used to buy Chocolate Lemon Bark Candy in specialty stores every Christmas. Then, for some reason, it became hard to find and there I was stuck with an addiction.  As they say, necessity is the mother of invention. There was nothing left to do but create my own recipe! I now share it with you along with an official proclamation. Yeah, I figure I should use this title of mine for good. Therefore, as the Belle of All Things Southern I now proclaim that chocolate is the new tofu.  You’re welcome! And now, the recipe.

“Chocolate Lemon Bark”

1 pound white chocolate bark
14 ounces old-fashioned lemon drops, crushed

4 teaspoons lemon extract

There are only three ingredients here, which means it was super easy, but I perfected the chocolate to lemon extract ratio with trial and error. Take note, if you try to use anything less than four teaspoons of lemon extract you’re going to have white chocolate with lemon candy– not Chocolate Lemon Bark!

First step, we’ll take a hammer to a bag filled with fourteen ounces of lemon drops and crush them into small pieces. This is a good time to get out any buried aggression. Set aside.

Melt white chocolate bark in a double boiler on the stove and stir in lemon extract. Spread this over a sheet of wax paper on your counter and sprinkle with the crushed lemon candy. Pop the cookie sheet into the refrigerator until it sets. Afterwards, break it up in pretty bite-size pieces and enjoy.
