Luanne’s Sweet Potato Casserole

I thought I would share a favorite recipe with you today. If you don’t have this in your recipe box, you need it. It’s a staple here in the south for any special holiday or Sunday lunch. Hope you enjoy!

Ingredients:

3 cups mashed sweet casseroles (1 large and 1 small can, drained well)

1 cup sugar

1 tsp. cinnamon

2 eggs

1 tsp. vanilla

½ cup evaporated milk

Directions:

Mix well and pour into 9 X 13 buttered pan.

Topping

(Suggested to use 1 ½ times the topping)

1 cup brown sugar

1/3 cup self-rising flour

1 stick of butter, softened

1 cup chopped pecans 

Directions:

Mix and crumble on top of sweet potatoes. Bake at 350 degrees for 30-40 minutes.
