Aunt Sandy’s Red Cinnamon Candy

This recipe belongs to another of Phil’s sisters. Aunt Sandy has been making her Cinnamon Christmas Candy for years. The cinnamon oil can be hard to find in stores, but do order it online. Using cinnamon extract will not deliver the same big flavor. If you’re a cinnamon fan, this one’s for you.

Ingredients:

3 and ¾ cup sugar

1 and ½ cup light corn syrup

1 cup water

Red food coloring

Powdered sugar

1 and ½ teaspoons of cinnamon oil

Prepare cookie sheet by sprinkling lightly with powdered sugar. Set it aside. Take a small boiler and sugar, light corn syrup, and a cup of water.  Mix well over a medium fire.

Once it reaches 300 degrees on a candy thermometer, remove it from the heat and add cinnamon oil and enough red food coloring to turn it a bright red. Pour immediately over the powdered sugar on the cookie sheet and let it harden. Crack into small bite-size irregular pieces.
